"We thought, it's such a beautiful location right here on the ocean at Keawakapu, why waste it during the day? Let's share it with others."
Look out from the open-air establishment and you will find Kahoolawe, Molokini and Lanai islands, the West Maui Mountains and Pu'u O Lai cindercone.
"The bongo lady, who dresses all in purple, frequents the beach here, as do the noodle people - a group of seniors who do water aerobics with colorful noodles for floatation," says Blackburn.
"Then you can also watch the stand-up paddleboarders, the snorkelers, the divers, the kayakers and the families on the beach. It's quite the scene."
With all of the beach action combined with the gourmet cuisine and the classy free valet parking, Sarento's dishes up a winning morning experience.
Begin your day with a variety of eggs Benedict such as the "Club" with Canadian and applewood-smoked bacon along with oven-roasted turkey; and the "Pacific" with lump crab cakes, asparagus and sauce Choron.
"Choron is basically Hollandaise with our own 24-hour oven-dried tomatoes and extra-virgin olive oil added to the mix," says Tri-Star's Corporate Chef Geno Sarmiento. "I use Maryland blue-lump crab. This is a top seller and seems to be everyone's favorite."
"Our loco moco is made with my filet-mignon meatball, the same recipe that I use at night. I grind it up and mix it with fresh Italian herbs, bread crumbs and parmesan cheese and serve it with two eggs sunny side up, fried rice and some mushroom gravy."
The breakfast burritos are huge, the Caprese omelettes with fresh mozzarella are delightful, and the bananas Foster French toast with caramelized fruit is over the top, when you order it a la mode. Call Sarento's at 875-7555.
