Chefs share expertise at collaboration dinner

FIRST PHOTO: Calgary chefs John Jackson and Connie DeSousa cut the strings they used to truss their cured pork loin roasts stuffed with pig heart pork sausage Thursday evening after taking them out of the oven at the University of Hawaii Maui College's culinary arts center during the Maui County Ag Festival's Grown on Maui Chefs' Collaboration Dinner. DeSousa and Jackson are part of a Canadian contingent taking part in today's Ag Festival at the Maui Tropical Plantation in Waikapu.
