Owner-chef Gerard Reversade is from Gascony, and he excels at these wine dinners that highlight the food and the wines of his homeland. Past wine dinners have featured the Loire Valley and Burgundy. But he always adds an island twist. “Chef Gerard is now serving Maui Cattle Co. all-natural filet of beef and Haleakala grass-fed lamb,” says his General Manager Genevieve Simpson. “He also just got back from the lavender farm in Kula, where he picked some fresh lavender so he may start to play around with his dessert that will be served at the dinner. The accompanying wines will be by Southern Wines & Spirits.”
